Summer bite – flaky ice crystals and refreshing lightness

Recipe: Watermelon granita with Rooh Afza.

You need: 1 1/2 cups of a water, 3 spoons rooh afza syrup, juice of 1/2 a lemon, 2 spoons sugar and sprigs of fresh mint leaves. Stir it all in to blend well. Freeze inside a hollowed water melon o impart the water melon flavour, else blend in 1/2 cup of watermelon puree.

To make: Pop this in the freezer, and occasionally scrape it up with a fork to form its granular to flaky consistency.

Verdict: Very light and refreshing.
This is frozen dessert at its most primitive, so the process of making it is really simple, and makes for a perfect bite on a summer afternoon.

Pro tip: If using a water melon “bowl” to freeze the granita, do not use the same “bowl” to serve the dessert. The frozen melon tends to shrivel and turn soggy as it returns to room temperature. Instead, use freshly scooped melon or a regular granita bowl to serve.
