Quick recipe – Red cabbage stir fry

Red cabbage is a true winner – it looks gorgeous, tastes great (raw or cooked) and is versatile enough to make great slaw, salad, stir fry or even curry.

This stir fry is super easy and takes about 10 minutes to put together.
All you need

Fresh from the garden:
Garlic – 6 cloves (finely chopped)
Red onion – 1 large (finely chopped)
Green chillies – 2  (finely chopped)
Red cabbage – about 1/4 of a medium sized  (chopped)

Dry ingredients:
Poppy seeds (Khus khus) – 1/2 tsp
Black lentil (Urad dal) – 1/2 tsp
Grated dry coconut – 1 tsp
1/2 a bay leaf (chopped)
Red chilli powder – 1/2 tsp
Cashew nuts – 6  (coarsely ground)
Salt to taste

Dry roasted and ground:
Cumin seeds – 1/2 tsp
Coriander seeds – 1/2 tsp

Olive oil – 2 tbsp

Recipe

Heat the oil in a pan. Add the poppy seeds, black lentil and roast till mildly aromatic. Toss in the finely diced garlic, onions and chopped bay leaf and cook for a couple of minutes.

Add the chopped green chilli, cashew nuts, coconut, red chilli powder, cumin powder, coriander powder and salt. Toss the ingredients over medium flame for a couple of minutes.

Now add the chopped red cabbage and mix well. Add a couple of table spoons of water, and stir fry until the cabbage is cooked just enough.
